This was my mother’s favourite summer season soup. The mix of chilly + spicy is so great – and so surprising. It is excellent for a fast weeknight dinner, because it takes solely ten minutes to make. It is also a superb amuse-bouche for a cocktail party, and for those who add slightly additional jalapeño, it’ll actually amuse individuals’s bouches! A high-speed blender (you understand how I worship my Vitamix) makes it completely easy and creamy each time.
Substances:
- 1 and three/4 English cucumbers, peeled and chopped
- 1/2 avocado
- 8 ounces plain, natural yogurt
- 2 tablespoons lime juice
- 3 tablespoons chives, chopped (optionally available)
- 3/4 -1 teaspoon sea salt
- 1/4-1/2 jalapeno, seeds eliminated (or not for those who like a significant kick), and chopped
- 2 cups ice cubes
